Go with the flow. Bourbons are usually simple to roast. Start with medium โ€“ high heat, then decalin slowly after reaching yellow. Be careful around the first crack; it is still high altitude coffee. Keep development longer.

Please note this is a general, not a specific tip. Each coffee tends to behave a bit (or a lot!) differently and should be approached individually. We highly recommend working with a colorimeter machine. Your local data, depending on your grinder, grind size and the way you prepare coffee surface for measurements, will be the most precise tool for your QC routine aside from cupping.

Coffee processing method

After cleaning and sorting, the fruit is pulped and the beans move into a stainless-steel bioreactor equipped with sensors and full control of oxygen, temperature, pH, ยฐBx, and pressure. Inside this controlled environment, high oxygen levels stimulate the naturally occurring yeast strains of the Red Striped Bourbon variety. Over 48 hours, these yeasts transform sugars in the mucilage into aromatic precursors, enhancing the floral, fruity, and complex profile typical of this variety. After fermentation, the coffee is washed three times.
