Regardless of the region, our honey and natural Costa Ricans tend to roast pretty similarly. We recommend a fairly subtle approach from the beginning and building up the energy progressively through the roast in order to achieve demanded roast time. These coffees usually take the heat very efficiently, so watch out close to the first crack and don’t let your RoR to sky rocket if you want to be in full control.
Please note this is a general, not a specific tip. Each coffee tends to behave a bit (or a lot!) differently and should be approached individually. We highly recommend working with a colorimeter machine. Your local data, depending on your grinder, grind size and the way you prepare coffee surface for measurements, will be the most precise tool for your QC routine aside from cupping.
This yearโs SL28 Natural comes with a little twist. Youโre probably wondering: why the name Pyramid?
After harvest, the cherries are first washed and put through floater separation to remove underripe and underdeveloped fruit. This step helps reduce the risk of โquakers,โ a common challenge in naturally processed coffees, creating a cleaner and more consistent cup.
The cherries are then dried on patios for around 9 days, but this is where the process takes an interesting turn. Every afternoon, the coffee is gathered into smaller pyramid-shaped mounds, or tiny volcanoes, which inspired the process name.
The pyramid shape serves an important purpose. During cooler nights it helps retain heat within the mass of coffee, creating a more stable drying environment. Rather than cooling down too quickly and having to fully restart the drying cycle each morning, the cherries continue moving through a slower and more controlled process overnight.
By concentrating the coffee into pyramids, the cherries create a more consistent internal environment where moisture and temperature remain more balanced throughout the pile. This encourages a slower, uninterrupted fermentation and a more even drying process across all the cherries. In a way, the pyramid acts like its own small ecosystem, maintaining momentum and allowing the coffee to progress naturally without dramatic shifts in temperature.
After the initial 9 days on patios, the coffee is transferred to mechanical drying to carefully finish the process. This final stage further stabilizes moisture levels and ultimately helps homogenize the coffee, ensuring greater consistency throughout the lot and creating a more uniform final cup.
Small changes in process can create a surprisingly big impact, and in this case, the Pyramid method is all about consistency, control, and getting the best expression of this SL28 Natural.

Hacienda Sonora Estate has been in Albertoโs family for more than a Century. In the 1970s when Alberto took over the farm,
he began planting most of the land with coffee, and shortly after it became the main source of income.
In 1999 with historical low coffee prices, Alberto invested in a Mill to be able to maximize his quality, to do so he became a pioneer in very alternative processing techniques such as Honey and Naturals. Also became living proof of how different varietals could create different levels of complexity in the cup.
In 2011, Albertoโs son, Diego, joined the operation as co-manager. Nowadays, Sonora has more than 20 different varieties of plants in 80 hectares of coffee (+ 20 hectares of forest reserve) and is known to be a welcoming place forcoffee lovers.
