This variety is usually simple to roast. To enhance its acidity, start aggressively, but if you need to mute the acidity, take a slower, more gentle approach. Colombians are usually dense and resistant to high heat, so don’t stress that you’ve used too much gas. As many other high altitude coffees are usually very fragile around the first crack, keep in mind that it can crash easily.

Please note this is a general, not a specific tip. Each coffee tends to behave a bit (or a lot!) differently and should be approached individually. We highly recommend working with a colorimeter machine. Your local data, depending on your grinder, grind size and the way you prepare coffee surface for measurements, will be the most precise tool for your QC routine aside from cupping.

Ecological trails wind through the plantation, biodiversity thrives, and comfortable cabins offer guests a quiet place to rest after a day on the farm.

Área 18 Processing Center was born in 2024, when three companies came together around a shared vision: to unlock the full potential of the coffee cherry and everything it can offer. Rather than treating the fruit’s by-products as waste, they set out to transform them into value-driving innovation,
sustainability, and better returns for producers and consumers alike.
