Start high, and keep it there as long as you can to keep the roast on the shorter side. If you do it well, this Pink bourbon will shine with its beautiful, bright, and vibrant acidity. The only consideration is roasting it too light, which can be easily done with roasting this fast. If you taste cereals instead of florals, then youโre too light.
Please note this is a general, not a specific tip. Each coffee tends to behave a bit (or a lot!) differently and should be approached individually. We highly recommend working with a colorimeter machine. Your local data, depending on your grinder, grind size and the way you prepare coffee surface for measurements, will be the most precise tool for your QC routine aside from cupping.
Pink Bourbon is a rare Arabica variety native to Colombia’s Huila region. Once believed to be a cross between Red and Yellow Bourbon, genetic research has shown it is more closely related to Ethiopian landrace varieties, making its true origin still a subject of ongoing study.
Renowned for its large pink cherries and naturally high sugar content, Pink Bourbon produces coffees with a silky body, vibrant acidity, and exceptional floral complexity. Its outstanding cup quality, combined with low yields and challenging cultivation, has made it one of the most sought-after and exclusive coffee varieties in the specialty coffee world.
