Our coffee flavor profiles may vary as we consistently re-evaluate the quality of our coffees. Please keep in mind that coffee is an agricultural product, and its flavor notes can naturally evolve over time. Also, please remember that taste, especially in the context of such fragile product like coffee, is highly subjective! Our flavor notes reflect our individual interpretations during QC and shall be considered as guidance towards flavor groups rather than rigid and unquestionable coffee’s properties.

Roasting Tips

A majority of Eduardo’s coffees like a high burner penetration before and after the first crack, which might mean your RoR curve shall look more flat before and after the first crack. Hence your end temperature will probably have to be touch higher in order to get a proper color reading.
Don’t be afraid of a “not-a-perfect-looking” curve, just make sure you deliver enough heat during the last phase of your roast, and that can mean higher burner settings in comparison to all other Central American washed.

Please note this is a general, not a specific tip. Each coffee tends to behave a bit (or a lot!) differently and should be approached individually. We highly recommend working with a colorimeter machine. Your local data, depending on your grinder, grind size and the way you prepare coffee surface for measurements, will be the most precise tool for your QC routine aside from cupping.

Our coffee journey with Eduardo began in 2017, way back on our first origin trip. We held off on buying his beans until 2020, when he finally set up his wet mill—no more cherries at the local market!

Now, he’s always looking for ways to improve his process, and our cups have never been happier.

Finca San Jose Del Lago

Finca San Jose del Lago is definitely a must visit farm! It is located in the western highlands of Guatemala in the department of Solola overlooking beautiful lake ATITLAN and not one but three majestic volcanoes – ATITLAN, SAN PEDRO and TOLIMAN.

The farm covers 200 hectares of which 45 hectares is cultivation of coffee. The rest of the area is a natural reserve and each time we visit we enjoy the untouched nature and the wildlife that finds its home there.

San José del Lago altitude spreads between 1.565 bordering the lake to 2.100 m.a.s.l. in the mountains.
