Working with coffee in Panama was never really our plan, until we met Nadeia.

We connected with Nadeia and her Jaramillo Estate coffee farm back in 2022 and instantly felt like we had known each other our whole lives.

Nadeia is a perfect example of a strong and independent person who is driven and eager to learn, aiming for a better future not only for her family but also for the coffee she grows.

Nadeia is fairly new to the specialty coffee market. Every year, we support her and make small changes that, in the long term, will (crossing fingers) result in a consistently excellent cup of coffee.

This relationship is very personal to us, as is this coffee. It represents Nadeia’s dedication, hard work, and care for her craft.

We wouldn’t describe these beautiful coffees as very different to other Centrals roasting-wise, just remember a general rule of thumb: the more complex and rich coffees, the lighter they can be roasted without a presence of underdeveloped flavours. When dealing with such high qualities, one can drop the batch touch earlier, making the final brew a bit more nuanced, bright and juicy. You can try to hit lighter colors with these ones and see for yourself!

Please note this is a general, not a specific tip. Each coffee tends to behave a bit (or a lot!) differently and should be approached individually. We highly recommend working with a colorimeter machine. Your local data, depending on your grinder, grind size and the way you prepare coffee surface for measurements, will be the most precise tool for your QC routine aside from cupping.
