Following a 24-hour whole cherry fermentation and pulping, the coffee undergoes a 48-hour Oxidation Washed fermentation in a bioreactor. During this stage, oxygen levels, temperature, and other environmental conditions are carefully controlled to encourage the activity of naturally occurring yeasts. This precise fermentation enhances the coffee’s floral aromatics and complexity while preserving the clean, vibrant character of a washed profile. The coffee is then thoroughly washed before drying.

Just twenty minutes from Popayán, at 1850 meters in the hills of Timbío, sits Finca Santa Bárbara – a 14-hectare farm where Castillo, Pink Bourbon, Striped Red Bourbon and Geisha grow beneath the shade of native trees. The farm was designed not only to produce exceptional coffees, but also to welcome visitors into the natural beauty and traditions of Cauca. Ecological trails wind through the plantation, biodiversity thrives, and comfortable cabins offer guests a quiet place to rest after a day on the farm.

Área 18 Processing Center was born in 2024, when three companies came together around a shared vision: to unlock the full potential of the coffee cherry and everything it can offer. Rather than treating the fruit’s by-products as waste, they set out to transform them into value-driving innovation,
sustainability, and better returns for producers and consumers alike.
