Coffee processing method

After cleaning and sorting, the cherries are depulped and transferred into the stainless-steel bioreactor. Inside, a must—a mixture of water and mucilage—is prepared to support the growth of microorganisms. The first 18 hours form an oxidation stage, encouraging yeast reproduction. These yeasts then dominate the next 36 hours of fermentation, shaping the aromatic profile typical of the Castillo variety. After a total of 54 hours, the coffee moves on to drying.

Área 18 Processing Center was born in 2024, when three companies came together around a shared vision: to unlock the full potential of the coffee cherry and everything it can offer. Rather than treating the fruit’s by-products as waste, they set out to transform them into value-driving innovation,
sustainability, and better returns for producers and consumers alike.
