Coffee processing method

After cleaning and sorting, the fruit is pulped and the beans move into a stainless-steel bioreactor equipped with sensors and full control of oxygen, temperature, pH, °Bx, and pressure. Inside this controlled environment, high oxygen levels stimulate the naturally occurring yeast strains of the Red Striped Bourbon variety. Over 48 hours, these yeasts transform sugars in the mucilage into aromatic precursors, enhancing the floral, fruity, and complex profile typical of this variety. After fermentation, the coffee is washed three times.

Finca Santa Barbara / Area 18
